Instructional Program (CIP)
Description
This program prepares individuals for employment under the supervision
of chefs and other culinary professionals as culinary support staff and
commercial food preparation employees. Instruction includes safety,
sanitation, use and care of equipment, basic food preparation and
cooking skills, bakery skills, purchasing, menu planning, and
introduction to culinary supervision and management skills. Practical
on-the-job training, an essential component of the program, occurs in
the on-site commercial kitchen and cafeteria.
